Meet Chef Kent Moody – The Culinary Heart of Camp Knot a Phe

When you think of Camp Knot a Phe, you might picture campfires, family connections, and fun-filled activities—but if you’ve been lucky enough to attend, you also know that some of the most memorable moments happen around the dinner table. That’s thanks to the incredible Chef Kent Moody.

Chef Moody is the Chef and Kitchen Coordinator for the ASU College of Health Solutions, where he oversees The Kitchen Café, a not-for-profit venue run by upper-level nutrition students. These students, guided by Chef Moody, gain invaluable hands-on experience applying their knowledge from food service and nutrition management courses. But his impact goes far beyond campus.

For years, Chef Kent has been an essential part of Camp Knot a Phe, designing and preparing our entire low-protein menu for campers with PKU and other metabolic conditions. From tacos and pineapple fried rice to jackfruit creations and churros that "taste better than the regular ones!", Chef Kent and his team bring flavor, creativity, and joy to every plate.

His partnership with our community goes deeper than just meal planning. Chef Moody generously volunteers his time, and the students he mentors also join us at camp—preparing meals, learning about metabolic needs, and earning college credit through ASU’s outreach program. It’s a win-win for education, service, and the families we serve.

Another key part of our mealtime success is thanks to our volunteer POW WOW leaders. These incredible volunteers assist patients with planning their protein intake for the day—an essential skill for anyone managing a metabolic disorder. Their guidance not only supports nutritional needs but also gives families the freedom to relax and visit during meals. POW WOW leaders help make mealtimes less stressful, more educational, and even fun. They empower campers to try new foods, build independence, and connect with others who understand what it’s like to live with a metabolic condition.

We are incredibly grateful for Chef Kent’s dedication, professionalism, and heart. His meals don’t just nourish our bodies—they bring our community together. And with the support of the ASU students and our incredible POW WOW leaders, mealtime at Camp Knot a Phe becomes one of the most meaningful parts of the camp experience.
